Does the server support UTF8? If so change the Encoding in the Advanced tab of the FTP settings.

Just add those directyories to the exclusion list if the content is unimportant.

About the warning: just inactivate your mirror directory in the settings (Advanced tab).

If you shhutdown in thew middle of an incremental backup, then the next backup will copy the files that wern't copied during the canceled backup.
