It's trying to delete the source. That's why yoou never under any circumstances should make a mirror task.

Maybe that versionof outlook coudn't handle a non ANSI encoding... Just guessing.

ost files are NOT included as default by the OS in a Volume Shadow Copy, because there is no meaning in backing up it. You can 1- Ignore it 2- Don't use VSC to include it but risking to have problems with other files or 3- Tell the OS to include those files as https://superuser.com/questions/1371504...

The encoding used for the zip file is (if I remember it correctly, unicode 16 bits). If you try to open it with another modern client, do you get the same problem?

Try using absolute paths to see if it works. Like
/home/<username>/MyDocsBackup/backup1/ etc.
Or if using relative paths, try omiting the first /
