I have been running differential and incremental backups of the same files to see the differences in the two modes, but have found that they are both performing in the same way - as an incremental backup. The differential backup does not backup all the changed files since the last full backup, just the files that have changed since the last differential backup.
I notice that the file name for the full backup folder is not the same as in the log - see attachments - I do have "Include backup type in the name" checked in the task.

Are you sure you are clearing the archive attributes on your task?

I have "clear archive attribute" checked in the advanced tab but I did have "use archive attributes" checked in the general tab so have unchecked that

Use archive attributes needs to be checked. Clear archive must be checked as well. Perhaps the program is failing to clear the attributes (can be seen in Verbose and individual log mode).

I originally was testing the differences between inc and diff backups on the same pc
I have now set up a diff backup on a USB drive and it is working fine with the same settings as before.
